Chicken and Pesto Roll Up

Spread the lavash on a clean work surface. In a small bowl, with a rubber spatula, blend together the cream cheese and pesto until smooth. Divide the cheese among the flatbread and spread evenly, covering as much of the flatbread as possible. Lay the chicken slices on top of the cheese, in one direction. Sprinkle with artichoke hearts and red onion. Roll the lavash up tightly to create a log shape with the chicken running the length of the log. Just before serving, cut the wrap in half crosswise on a slight diagonal. |
Ingredients
- 2 loaves of Ara-Z lavash (flatbread)
- 1/4 cup cream cheese
- 1 tablespoon prepared pesto
- 4 ounces thinly sliced cooked chicken
- 1 13 3/4-ounce can artichoke hearts packed in water, well drained and chopped
- 1/2 small red onion, very thinly sliced
