Ingredients
- BreadMasters Whole Wheat Stone Lavash (or use Markook Thinnest for an ultra-thin wrap)
- Spicy Mayo
- 1/2 cup mayo
- 2 tsp hot sauce
- 1 tsp pickle juice
- 1/2 tsp fiesta seasoning
- Hot Chicken Tenders
- Oil for frying
- 1 lb boneless skinless chicken breast, cut into strips
- 1 1/2 cups flour
- 1 tsp each of: salt, pepper, garlic powder, onion powder, paprika, and cayenne
- 1 cup milk
- 1 TB pickle juice
- 1/4 cup hot sauce
- Toppings
- Lettuce, shredded
- Onion, sliced
- Tomatoes, sliced
- Pickles, sliced
- Cheese (provolone, cheddar, or pepper jack)
Instructions
- Make the Spicy Mayo: Mix together all spicy mayo ingredients. Refrigerate until ready to use (this allows flavors to meld).
- Prepare the Hot Chicken:
- Preheat oil to 325°F.
- Combine flour and seasonings in a bowl.
- Mix together milk, pickle juice, and hot sauce in another bowl.
- Dredge chicken through the seasoned flour to lightly coat.
- Dip the chicken in the milk mixture.
- Place the wet chicken back in the flour mixture and coat very well, pressing to adhere.
- Gently place chicken in hot oil.
- Fry 3-4 minutes per side, until golden brown and cooked through (internal temperature reaches 165°F).
- Drain on wire rack or paper towels.
- Assemble the Wraps:
- Spread spicy mayo on lavash.
- Top with shredded lettuce, sliced onion, tomatoes, pickles, cheese, and hot chicken tenders.
- Fold in the sides and roll up tightly like a burrito.
- Slice in half and serve immediately.
Recipe Tips & Variations
- Adjust the heat: Use less cayenne in the flour for milder chicken, or add extra hot sauce to the spicy mayo for more fire.
- Make it healthier: Air fry the chicken at 400°F for 10-12 minutes instead of deep frying.
- Meal prep: Fry extra chicken tenders and reheat in an air fryer or oven for quick lunches.
- Wrap alternatives: Try with Markook Thinnest Flatbread for an extra-crispy wrap or ARA-Z Lavash for a classic experience.
- Pro Tip: Lightly toast the lavash in a dry skillet for 30 seconds per side before assembling for extra structure and a warm, pliable texture.
