Firetail Quesadillas

Firetail Quesadillas


  • Seasoned ground turkey –
  • 1 lb ground turkey
  • 1 red bell pepper, diced
  • 2 TB fiesta seasoning
  • 1 cup water
  • 4 pieces Firetail Flatbread
  • 1 cup grated cheddar cheese
  • 1/4 cup chopped cilantro
  • Butter, for cooking
  • Pico de Gallo


  1. Seasoned ground turkey –
  2. Cook ground turkey over med heat until no longer pink
  3. Stir in bell pepper, fiesta seasoning and water
  4. Bring to a boil, reduce heat and simmer 10 minutes
  5. Set aside
  6. Place flatbread on work surface
  7. Add a layer of cheese
  8. Follow with seasoned ground turkey
  9. Sprinkle on cilantro
  10. Top with cheese
  11. Fold in half
  12. Heat butter in skillet
  13. Place quesadilla in skillet and cook until golden
  14. Flip the quesadilla and cook until crispy
  15. Cut in half and top with pico de Gallo
  16. Enjoy!
