Chicken Enchilada Casserole


Ingredients

  • Breadmasters Markook Lavash Flatbread
  • Cilantro onion relish –
    • 1 bunch cilantro (washed, dried and chopped)
    • 1/2 yellow onion, diced
    • Juice from half a lime
    • Salt to taste
  • Fillings –
    • 4 cups salsa verde (recipe on my blog)
    • 4 cups shredded chicken (recipe on my blog)
    • 4 cups shredded jack cheese
  • Toppings –
    • Pico de Gallo (recipe on my blog)
  • Salsa verde crema –
    • 1 cup sour cream
    • 1/4 cup salsa verde
    • Juice from half a lime
    • Salt and pepper to taste

Instructions

  1. Cilantro onion relish
    • Combine the cilantro, onion, lime juice and salt
    • Set aside
  2. Assembly
    • Spread about 1 cup of salsa verde in bottom of 9×13 casserole dish
    • Fit a Markook flatbread into the casserole dish perfectly
    • Layer 2 cups of chicken on the flat bread
    • Sprinkle over cilantro and onion relish
    • Add a layer of cheese
    • Repeat layers
    • Top with Markook flatbread, salsa verde and remaining cheese
    • Cover and bake 30 minutes
    • Uncover and bake 10-15 min more until cheese is bubbly
    • Serve with salsa verde crema and Pico de Gallo
