Ingredients
- 2 pieces Breadmasters Markook Thinnest Flatbread
- 100g egg whites (about 3 large egg whites)
- ½ Italian sausage, casing removed
- 125g potatoes (about 1 small potato), diced
- Salt and pepper, to taste
- Olive oil spray or butter, for toasting
Instructions
- Air fry the potatoes: Dice potatoes into small cubes. Air fry at 380°F for 10-12 minutes, shaking halfway through, until golden and crispy. (Alternatively, pan-fry in a skillet with a little oil.)
- Cook the sausage and eggs: In a separate pan over medium heat, cook Italian sausage, breaking it apart with a spatula, until browned and cooked through. Add egg whites and scramble until just set. Season with salt and pepper.
- Assemble the wraps: Lay each piece of Markook flatbread on a clean work surface. Place the egg scramble and crispy potatoes on one side of each flatbread.
- Roll and seal: Roll the flatbread tightly from the filled side. Place seam-side down in a hot, lightly oiled pan and toast for 1-2 minutes until the wrap is sealed and lightly crispy.
