Ingredients

- Seasoned ground turkey –

- 1 lb ground turkey

- 1 red bell pepper, diced

- 2 TB fiesta seasoning

- 1 cup water

- 4 pieces Firetail Flatbread

- 1 cup grated cheddar cheese
-
- 1/4 cup chopped cilantro
-
- Butter, for cooking
-
- Pico de Gallo
Instructions

- Seasoned ground turkey –
-
- Cook ground turkey over med heat until no longer pink
-
- Stir in bell pepper, fiesta seasoning and water
-
- Bring to a boil, reduce heat and simmer 10 minutes

- Set aside
-
- Place flatbread on work surface
-
- Add a layer of cheese
-
- Follow with seasoned ground turkey
-
- Sprinkle on cilantro
-
- Top with cheese
-
- Fold in half
-
- Heat butter in skillet
-
- Place quesadilla in skillet and cook until golden
-
- Flip the quesadilla and cook until crispy
-
- Cut in half and top with pico de Gallo
